Hilltop HoneyBrew Is Here

Our Hilltop HoneyBrew is a collaboration with Hilltop Honey Co. in Lewistown, IL. We used their amazing Spring Honey for this project, and fermented it with Mosaic hops to create a unique flavor profile. It’s very light, crisp, and easy to enjoy. We elected to lightly carbonate and package in a 16oz can, which is a first for winemaker Brad: “This weird little guy is delicious and very refreshing, but I’m still struggling to figure out how to describe it to people. It’s somewhere in the middle of a beer-seltzer-mead triangle. It’s not really wine-like either, but people have said that the fizzy finish reminds them of Prosecco. For me, the best approach is one with a completely open mind—this is a really cool beverage, and I think a lot of people are going to love it.”
